I'm 42 years old and heavier than I've ever been! I was always a comfortable weight until I had my son 12 years ago and I never quite lost the "baby weight" - I've tried several diets over the years and although I don't have a ton of weight that needs to go, the extra 30 lbs I carry seem to effect my energy level and I want to be healthy and energetic for my family - especially for my wonderful husband! I know with support, prayers and self-discipline I can do this!

For my challenge I will give up any snacks after 6 pm. I am notorious for grabbing that quick snack right before bed which I know is the worst time to put in the calories! So instead, when I feel the urge to snack I'm going to commit to doing situps instead and drink a glass of water which I know will curb my appetite.

Yay! I love this stretching challenge! Hard day at work today and I just completed about 15 minutes of stretching and I feel much more relaxed. I went to the Mayo Clinic link and not only did the stretches for the major muscle groups, but they have links for stretches you can do in the office too. I get so much tension in my neck, back and shoulders at work - but running through these stretches really helped relax my muscles! I'll post after I stretch in the morning too and tell you how I feel then.

Porsches are from Germany so I'm posting a recipe for
German Deli Cucumber Salad (Gurkensalat)
Translated from the German recipe of Maria Hedwig Stuber.
4 servings 40 min 20 min prep

1 big cucumber
salt
1/2 garlic clove
1 small chopped onion
2 tablespoons dill or parsley or borage (use a combination)

Marinade
2 teaspoons vinegar
salt
sugar (may substitute Splenda)
pepper
2 tablespoons salad oil
1/2 cup sour cream or plain yogurt

For marinade: mix all ingredients, oil comes last; mix well.
Then cut the cucumber to fine slices using a potato peeler.
Sprinkle salt on them and let it rest for 20 minutes.
Drain liquid released by the cucumber.
Mix the cucumber slices with the onion and marinade and add the herbs.
Variation: You can add black olives and cubes of sheep´s or goat´s cheese.
