Additional Description/Notes:
Preheat oven to 450. Cut chicken breast into strips. In a food processor grind Melba Toast into bread crumbs. Set aside. Place margerine in a medium bowl; microwave for 30 seconds or until melted. Combine melted margerine and hot sauce in a large zip lock bag. Coat chicken with Melba Toast bread crumbs and place in zip lock bag with buffalo sauce mixture. Shake. Place chicken on cooke sheet and bake for 25 minutes. Serve chicken over lettuce. Sprinkle on mozzarella cheese.
