Sorry I've been away so long. I just needed a break and was dealing with several health issues. I had surgery in December for what they thought was a hernia. Turned out to be a cyst filled with fluid, so the doctor removed it and cleaned it up, but it didn't heal. He went back in in February. He found several more cysts all over my upper abdomen from the sutures from previous surgeries. He had to leave the wound open so I was on a wound vac until just this week. Everything is healing up better than they expected but I'm going to have a lovely hole in my upper abdomen/lower chest. At first you could drop a tennis ball in the hole and now its down to a large marble, but about 2 inches long. I gained a bit during the immediate healing time and have gotten back to a plateau. I have kept up with my diet, though did enjoy the holidays with family. So still plugging along, healing up again and actually feeling much better than I have in years. Don't know that I will use this for my daily food recording as I have really learned to control what I eat.I have also been experimenting alot with recipes and will be posting some online, and maybe even work on a cook book. I do hope everyone has a Happy Easter, and the Lord is Risen Indeed.

Having dinner tonight with some new friends from church small group. They are making roast with some veggies that promise to be low carb and I made dessert. Its a sugar free low carb gluten free chocolate peanut butter cream cheese pie.



recipe:
crust
1.5 c almond meal
1/3 c cocoa
14 c splenda
5 tbsp. butter melted

mix and press into pie tin. I baked 10 minute then cooled.

Pie
1 jar walden farms chocolate peanut spread
16 oz cream cheese softened
3/4 c splenda

mix together well on medium speed

1 tsp unflavored gelatin
4 tsp cold water
1 c heavy cream
2 tbsp. splenda
1 Tbsp vanilla

in small pan combine gelatin and water, let stand until thick. Place over low heat stirring constantly until gelatin dissolves. Remove from heat and cool. Whip cream and sweetener until thick. Slowly add gelatin and whip until stiff.

Fold cream and peanut butter cream cheese together. Spoon into pie crust. decorate with melted dark chocolate and sugar free peanut butter cups. Refrigerate. I haven't figured out all the counts yet.

Finally got to the doctor Friday for the hernia. She immediately is referring me to the surgeon. Seems it can not be manipulated and she is concerned that its hard. Bummer. I really want to start working out again because I've got so much energy now! And I suppose that since I've already been cut open on the same scar so many times they will not have any other option but to cut again. Can they just put mesh in my whole abdomen? Can they make it Kevlar, and then I will be bulletproof like SuperGirl! hehe!

Thankful for:
A job I love that keeps me busy and challenges me to learn more.
A family that has seen me through so much and still loves me.
Grand children that bring me joy in seeing them follow the Lord in a way I never new was possible.
Having energy after so many years with none.
Being able to eat food and not get sick!
A husband that cherishes me even when I am not worth it.
A pastor that is not afraid to teach God's word.
A church family that is strong in the Lord.
A God that loved me so much he gave His Son to pay the death I deserved so I could be with Him forever.
