How long does it take to see results?
Two things: Increasing your water to at least 64 oz/day is probably necessary with all that fiber. Also, fruit has fructose which, in a book I read, causes us to produce even more insulin than table sugar! So substituting veggies as was suggested could be a big help. Also, the salt from the chips may be causing you to retain water if you're not drinking enough.
