I am a former overweight individual who has a horrible self body-image issue. I used to weigh 350 pounds and have lost 180 pounds. At 170 pounds I still feel fat and overweight and struggle to eat enough to maintain my weight. I have an intense fear of weight gain and use this site as a tool to help maintain my weight to ease the fears I have.

Just a Reminder
THROW THE DARN SCALES AWAY! As the OP said its a false god so to speak. Everyone puts all they have into that 10-20 seconds that you step on the scale. Go by the mirror, and how your clothes feel. Eat within your calorie range and trust that you are going about it the right way. Dont cut calories drastically because it will only lead to bad things, I learned this first hand.

Belly Fat
Although it would be nice, there is no way to spot reduce areas of fat. I would say continue progressing as you have and over time the tummy should naturally tighten back up. Hope this helps!

Carbohydrates????
Carbs are a non essential nutrient. They are all personal preference, if you feel that you keep your energy levels high with a lower amount of carbohydrates then by all means replace some carbs with proteins or fats. If you find yourself feeling sluggish you may need to add in some extra carbs. Hope this helps.
