Today's food diary is a great example of the way of eating that has helped me lose so much weight. My eating plan won't work for everyone, of course, 'cause we're all different, but I thought this might help someone out there.

I divide my food into types of food instead of specific meals in my diary, so these are the actual meals I ate today:

Salad: baby spinach, olives, avocado, tomatoes, and salad dressing

Fajitas: 2 pieces boneless, skinless chicken tenderloins, multi-colored peppers, cheddar cheese and cream cheese

Brussels Sprouts, sauteed with bacon and cabbage

A serving of my own recipe for low-carb lemon cheesecake

"Bulletproof" coffee, with salted butter and coconut oil

...And still have enough carbs left over for a snack later, if I want one. Maybe some pork skins, or some tuna salad, or even eggs and bacon!

I found this in the Cookbook here on FatSecret and made it tonight. Of course I changed the recipe up a bit, 'cause I'm a "recipe-redo" junkie lol, but it was really, really good. Here's a photo and my recipe:

Angie's Sausage Frittata




16 oz. Sausage
6 thin slices bell pepper - chopped (mine measured 38 grams)
1 cube onion seasoning (less carbs than an onion)
2 tsp. garlic powder
2 tsp. ground cumin
2 tsp. sage
6 large eggs
1/4 cup heavy cream or whipping cream
1/2 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
_____________________________________

Brown sausage, peppers, and seasonings and place in a casserole dish
Spread both cheeses on top of the sausage mixture
Whip together eggs and cream, and pour on top

Bake 20 mins at 375 degrees.

Makes 4 one cup servings

Each serving has:

Calories: 646
Net carbs: 4.75
