I do a lot of 'extra' cooking at night and use that for lunch the next day.
Also, I have a "muffin in a minute" that I make every day for breakfast with my egg or bacon:
1/4 cup flaxseed meal (I use the golden)
1 packet splenda
1 tsp cinnamon
1/2 tsp. baking soda
1 egg
1 tsp. butter
Combine the dry ingredients in a mug and stir to mix. Add the butter & egg, mix well, and microwave for 1 minute to 90 seconds, depending on yor microwave. I make it in a corning ware bowl, slice it in half and toast it! The net carb count is 3.2 grams.
It's yummy, and once you get out of induction,you can add nuts & other goodies, just remember to figure in the added carbs to your net carb count. I haven't tried it yet, but there is a recipe out there that uses pumpkin in it also. I am trying to find it again on the forums at the Atkins web site.
