Forty-something homeschooling momma struggling with multiple food intolerances and auto-immune issues. I have only 12 foods that are safe for me to eat without reaction:
Wild caught sardines and salmon
Organic free-range beef and chicken
Red or green cabbage
Red or watermelon radishes
Carrots
Cucumbers
Zucchini
Greens of any kind
Coconut and olive oil (Spectrum brand only!)
Pink Himalayan Salt
I cannot seem to digest ANY type of carb or sugar, including grains, complex carbs (legumes, seeds, or tree nuts), processed foods, but even vegetables (winter squashes) or fruits (bananas, oranges, or anything). I've tried low FODMAP, which helped for awhile, but since then my body is just not allowing any carbs period. I'd like to gain weight and muscle back up. I used to be a runner, which is just out of the question now as it eats my calories up so fast and puts strain on my auto-immune-fussy joints. Hoping to find some ideas and help here.
