The PBJ problem
PBJs are a snack for me and I don't eat them all that often, but you could try to substitute crispbread for the bread. That'll cut down on the calories and carbs in your sandwich. I recently worked for Wasa and had a chance to try their crispbreads. I prefer the Light'n Crisp ones because they're light and taste like rice cakes. Perfect to spread some peanut butter on top of and add some bananas. If you want to give them a try, there's a contest on their Facebook page right now that would give you a coupon by entering.

Patience is a virtue
Definitely once a week. I know I fluctuate based on the time of day and how much water I had to drink recently. I'd pick a random day and weigh myself that morning every week.

How can I curb the Carbs?
Eat more protein and high fiber foods. They fill me up so that I'm not hungry and feeling those carb cravings!

I need low-carb/SB Diet lunch ideas
I definitely agree with the whole wheat tortilla idea if you're at that stage in your diet. Whole grain and high fiber foods fill me up and keep me feeling satisfied, especially right after working out! Have you tried Wasa Crispbread? I've worked with their team and like them because you can top them with anything you want. I like making a Wasa with fruit and yogurt. They've helped me get more variety in my diet but stay healthy.
