I’m a 50 year old vegetarian. Ooooh…freaky, typing in the number 50 just made me shiver. My body maybe 50 but my mind for sure is in its 20’s. (wha-up)

I’ve been a veg-head for about 23 years for several reasons.
First, I changed my food lifestyle because my daughter has gastroparesis (paralyze stomach muscles) and I thought that a vegetarian diet would help her as she was growing up. To make a long story short I wanted to show her how to eat healthy by example.

Secondly, I love all animals and I don’t want to eat them. My husband still eats meat and I feel very guilty cooking it for him but it’s a concession I had to make to keep balance in the household. I’ve been happily married for 30 years and I have a 28 year old daughter that has achieved her Masters degree in teaching.

Even so I’m vegetarian & the foods were healthy it’s the "amount" of food I was eating that is causing me to be chunky at this time.

Feta Cheese
I love Feta…I use it in this recipe. Razz

1 package of plain crumbled Feta cheese, there is also fat free Feta

Medium size pasta shells, whole wheat if you like them, use about half of the regular size box

1 box frozen chopped spinach

1 pint of fat free ricotta

2 cloves of garlic, sliced fine

Small onion, chopped fine

You favorite spaghetti sauce, I use Prego

1 tablespoons of olive oil

Parmesan cheese or fat free parm cheese

Pepper to taste

Cook pasta shells as directed.

While waiting for that to cook, in a sauté pan cook drained frozen spinach with the olive oil garlic & onions. Cook until heated.

When the pasta is cooked, drain and place back in the same pot. Fold the ricotta with the hot shells then add the spinach mixture, fold in gently.

In a casserole dish put some spaghetti sauce in the bottom then add shells & spinach mixture in an even layer. Sprinkle crumbled Feta cheese & some parmesan cheese. Then do the same thing over again.
Sauce, shell mixture, Feta, parmesan cheese.
Add some pepper to the top, if you like.

Bake covered for about 15-20 at 400 this may vary.
This can serve at least 4 people

Best Place to Live in the U.S. - Sorry not a diet question
I’m originally from NYC/NJ and we are now in NC. Hubby’s job moved us out here about 4 years ago.
Doubt Every parking lot and road is a labyrinth to maneuver in. The school systems in Mecklenburg County are low rated.
Since I’ve been here, I have developed more allergies and asthma. I have no idea why but when I do leave the state for a while all that clears up within hours.

The gun laws are lenient; I was able to get a permit to purchase a gun in a week and get my concealed license in 90 days. Going to shooting ranges is my new found fun.

Everyone is very friendly but the pace is extremely sloooooooooow. If you’re a fast pace New Yorker like I was that will be a culture shock to get use to.

Still starving at night
When I get hungry I turn to a Vitatop muffin and hot cup of green tea. The Vitatops are about 100 calories, 1.5g fat, 9g fiber, 4g protein, along with the tea this combo is extremely filling for me.

Did anyone count calories on Thanksgiving?
I didn’t count, journal or even cared. It was one of my days off to “not” think or feel bad about my food consumption. I knew beforehand that I was gonna gain a couple of pounds back, so I told myself, “self it’s not a big deal, relax it will come off if you eat right the next few days” and it did.

I did gain two pounds and I already lost them. My butt is now, as my husband would say at its maximum wigglous state Razz .
So my world didn’t fall apart and I was able to handle the holidays without beating myself up over it. At this point in my weight loss journey it feels good to have that kinda of control again.
