Started Atkins on March 16, 2009. I try to stick to organics and whole foods.
I am an undiagnosed Celiac, so gluten-free is the way I roll (dork!). :O)
I'm absolutely adoring the way I feel now that I've changed the way I eat, let alone the way I think about food. I can hardly wait to see what happens in the coming months and years. I recognize that this is my new way of life, not just a diet I'm on until I lose the weight. In fact, although I have a goal weight in mind, I'm not even sure how my body is going to react to this long-term. So when I get there, I trust my body will tell me. It tends to do that.

Currently eating lots of GOOD fats (butter, coconut oil, olive oil, tallow, lard), moderate protein (beef, chicken, trying to increase fish), lots of veggies, drinking green tea (attempting to wean off of coffee due to adrenal issues) - aiming for whole foods, no processed anything.
Added daily supplements: fish oil (3200mg), multivitamin/mineral, Mg (750mg), [rhodiola & Relora/Bacopa-specific to adrenal issues], Vitamin D (10,000 IU), Lysine (500mg).
Vitamin C mega-doses as needed when I feel something coming on.
Basically anti-inflammatory because research is proving that chronic low-grade inflammation is what leads to pretty much every single disease or dysfunction out there.
