Getting loose skin
Good advice Lisa. I've just been researching the same problem and water, moisturising, good diet and exercise are the only way. Apparently it can take up to a year for skin to catch up with the rest of the body if you lose weight quickly. Check out livestrong.com which has a few articles on the subject.

DETOX!!!
HI - I've done the Jane Scrivner 30 day Detox every year for the last 3 and without fail lose at least 7lbs with no calorie counting and feel marvellous. Hair and nails noticeably stronger and eyes brighter, sleeping better etc. It allows fish so isn't as strict as some detoxes are and includes other routines eg daily body brushing for max impact. Highly recommend it.

back track!
Good on ya! Thats the secret of achieving your goal - being able to pick yourself back up, saying OK I had a bad weekend, but now onward and upward!

frustrating
Hmmm if you are eating between 1600 and 2000 cals per day this is why you are finding it hard to lose - despite the exercise. Try dropping to 1300 for a couple of weeks - you shouldn't go hungry. Also you say "roughly" 1600 cals so are you tracking all your food? Before I joined this site I was estimating my cals and then when I put every little morsel down in here found I was eating nearly 200 cals a day more than I had thought! Keep it up! I am 46 and on a mission to lose a stone.
