Ha, it's the opposite for me, tough to stay under 3k but I also enjoy daily "forbidden" diet foods. Probably why, but I'll never be on a miserable diet again in my life.

How Many Calories Should I Be Eating?
Put it this way, I am 190-195 lbs and am losing at a 2500 calorie intake. 1500 is super low and is actually the minimum anyone would recommend for any male, let alone one over 300 lbs. You will, of course, lose and lose quickly but for optimal end results and so that your body takes longer to adapt, you'd be better off with some patience. You would lose at a good rate and have more energy for workouts and have less of a chance of a binge with 2500 calories. Just advice.

Calorie count while allowing foods you prefer. No need to buy anything besides food. You can do it.

Calorie counting will always work. It's physics. We must work to make it work. Patience and being consistent over a long period of time are required.
