I'm on the trek to be the healthiest me I can be. I'm happy with my relationships, my work, my home, but I need to get happy with ME. Seems like I should have figured this out when I was 25, not 35...suppose I'm a bit of a late bloomer...but better late than never!

I recently adopted a vegan lifestyle and will live it until there's a physical and/or moral reason not to (which I don't see in the near future). I love to cook, try new foods and combinations of foods, and figure out what fuel is best for my body.

WHAT items do you like in your salad?
My standby salad is a tex-mex mix on greens. Combine the following: 1 can kidney beans, drained and rinsed; one can black beans, drained and rinsed, 1 can kernel corn, drained and rinsed, 1 can sliced olives, drained and rinsed, 1 container salsa (try to use the fresh stuff, not the jar), 1 bunch of scallions, chopped up, 1 bunch cilantro, chopped up, 1 or 2 bell peppers, diced. Season with cayenne, cumin, salt and pepper to taste. Add a little balsamic vinegar or lime juice for zing if you want. Mix it all up and let it marinate. Serve yourself a big plate of greens, a scoop of the bean salad, and top it with sliced avocado, sour cream or shredded cheese if you wish.

Exercise Options
Someone mentioned setting up a challenge on this topic. Believe it or not there's the "28 Day Sex Diet". I think there's a book you can buy, but really isn't it obvious? Actually what I remember about the diet is you do it everyday, in every position you can think of or have the energy for. Imagine what THAT "diet" will do for your body and your relationship!

Has Anyone Else Had Trouble Losing Weight Even Though They Are Sticking To Their Diet?
Whenever I've hit a plateau before, I change the foods I eat, change my workout regimen, and absolutely make sure I'm counting and journaling everything. I'd been hovering at 176 for months, then three weeks ago I went vegan and INCREASED my calories from 1200 to 1600. I've lost almost 6 pounds already. Sometimes your body just needs a wake up call. Stick with it, you'll get off the plateau when your body is ready.

Cottage Cheese
For a high protein summer snack and as an ice-cream substitute, put a cup of low-fat cottage cheese and a cup of frozen blueberries in a food processor with a little sweetener. This is almost like frozen yogurt, and it's soooo good for you!
