Mini crust-less quiches (southbeach diet)
It's not really a snack - it's breakfast - but this is an awesome time saver.
When I have some time on a weekend I make these cupcake sized quiches in bulk and freeze them. I leave half at work and half at home. It takes 1 minute to reheat them, and I have a healthy hot breakfast.
