Increasing distance
I'm a little confused.. 3 runs? Anyway for 8k race I wud recommend running 3 times a week: one HIIT, 1 long distance and one just an easy 30mins run like a 5k. U can add hill running as well.

Motivation
Agree with tglenna, sign up for 5K. Racing buddy will def help and even running with ur dog will push u go further ;)
