This is a family favorite summer meal. Can be lunch or supper. A great way to use up some of those tomatoes in the garden, quick and easy to fix meal on a busy day.

Tomato Gravy - Peel and slice ripe tomatoes. Heat butter in skillet. Dredge tomato slices in flour and place in skillet in a single layer. Season with salt and pepper. Cook tomatoes over med to med-high heat until crisp, carefully turn each slice and continue cooking until second side is crisp. Remove from skillet and place in a serving bowl. Make gravy in skillet from drippings. Add butter or oil if needed, add flour and cook for a minute. Add milk stirring quickly to avoid lumps. Season with salt and pepper. Cook until gray is thickened. (I like to add a little extra milk and then cook it down to the right thickness.) Pour the gravy over the tomatoes in serving bowl. To serve, place a piece of bread on plate. Dip out some of the tomatoes and spread over bread. Dip some gravy over all. YUM!

Serve fruit on the side.

I love making homemade pizza. Tomato sauce on pre-made wheat pizza crust with some lowfat mozzarella and bell peppers, with some buffalo chicken seasoning on top for some kick.
calories in < calories out. It's not easy, but it is simple.

That reminds me of the pizzas I made for a vegetarian friend for her birthday. She love quacamole so I did a Mexican version. Whole wheat crust, refried beans, black olives, green peppers, cheddar cheese. After it was baked I topped it with guacamole lettuce,onions and tomatoes. It was a big hit with everyone.

From our taco dinner last night, lunch will be vegetarian. Spanish rice and pinto beans. Cottage cheese.

I like to make a cucumber yogurt salad. Peel a large cucumber. cut in half and scoop out the seeds with a small spoon. Then shred it. Mix 3/4 cup of nonfat Greek yogurt with some ranch dressing seasonings and mix it in the the shredded cucumber. It's great as a side dish for fish.

YumOOOOOOO!!!! I will definitely put that on my menu for Salmon Patties, Mac and Cheese for next week.

I make a cucumber salad too, but it's not quite the same. I chop a cucumber, a couple tomatoes, a clove or two of garlic (more if it's just me!), a quick drizzle of olive oil, generous splash of balsamic vinegar, some basil, oregano, and fresh ground pepper. It's best if it sits for a while, but is also delicious right away, or after soaking overnight! Delicious, I can't get enough of it!
