Pork Cutlets in Onion Gravy, Fresh green beans and potatoes, Corn on the cob, Cucumber, tomato and onion salad. Delish!

Tonight it will be chicken breasts with raspberry sauce, baked potato, spinach. I think I am in a baking mood so I will do some whole wheat dinner rolls, too.

Homemade beef and noodles. Made possible by letting the food processor mix and knead the noodle dough. Hands on time for dish is about 15 minutes, most of that is rolling and cutting the noodles. I will serve broccoli and cauliflower with it and for desert fresh peaches and cream. Ok, I'm hungry now.

Made turkey burgers for the first time this weekend - came out wonderful!!! A few spices and a dash of worchestershire sauce mixed in it! Out of this world!!! If no one told me what I was eating I dont' think I would have known it was turkey!! I'm hooked!! AND you save about 300 calories or more per burger!!

Do you have any giant zucchinis that went crazy in your Garden? You can make Stuffed Zucchini, a popular dish in Venice, Italy.

Cut the zucchini in half lengthwise. Scoop out the seedy middle.

Fill the middle with bulk Italian sausage mixed with a little egg. You can use bulk Italian turkey sausage for less calories, or ground turkey seasoned with Italian seasoning. You can also pour over some ragu for extra moistness.

Top with some Parmesan cheese. Bake in 350° oven for about 45-60 min until cooked through and zucchini is tender. During the last 5 min. you can top with low fat provolone or mozzarella cheese slices.

Tonight it is Swiss Steak and Brown Rice. One of my favorites. My secret ingredient for exceptional Swiss Steak is thyme. Yum!
