Anyone have a good meatloaf recipe? I am not doing grains yet, and I don't like soft, grainy meatloaf anyway. I don't know what to use without bread crumbs or oatmeal. So eggs, milk, meat... What else?

Parmesan Meatloaf

2 lbs lean ground beef, 1/2 cup Parmesan Cheese, 1/4 cup Dijon Mustard, 1/2 cup low carb Ketchup, 2 tbs Marjoram, 1 tbs dried basil, 1 tbs dried parsley, 1 tbs oregano, 1 tbs thyme, 2 tsp salt, 2 tsp pepper, 1/2 cup mozzarella cheese, 4 cloves garlic chopped, 1/4 cup green bell pepper, 1 small onion very finely chopped, 1/2 cup low carb spaghetti sauce of your choice, 1 tbs olive oil, 1 large egg beaten (optional). In a large bowl combine beef, egg, seasonings and dressings in a bowl. Put mixture into a sprayed loaf pan then top with pasta sauce and mozzarella cheese. Place pan on bottom rack of oven and bake in preheated oven at 375 for 45 minutes to 1 hour. Remove from oven and allow to rest for 5-10 minutes before serving/slicing. Garnish with parsley if desired.

The only reason you put milk or other liquid in a meatloaf is for the bread or grains you added. Meat, egg and seasonings is all that is need. Sunkeeper's sounds delicious!

Mexican Meatloaf: 2 lbs lean ground beef, 1 egg, 1 cup salsa, 1 package taco seasoning, 1 cup pork rind flour (process pork rinds into fine crumbs), 1 cup grated cheddar cheese. Preheat oven to 350F. Mix all egg, hamburger, seasoning, pork rinds flour and 1/2 container of salsa, about 1 cup until combined. Press half of the meat mixture in a standard bread pan. Cover with 1/2 of the cheese. Press remaining meat mixture over the cheese. Bake for an hour or until meat begins to shrink from pan sides. Carefully pour out any excess liquids that might be bubbling around the edges of the dish. Add the rest of the cheese. Cook for five minutes more, or until cheese is bubbly. Let rest 10 minutes and serve with sour cream, guacamole, shredded lettuce, chopped tomatoes and black olives. Makes 1.2 pound meatloaf which serves 8. Per 1/8th serving (with these toppings): Calories 307, Carbs 4.7g, Fiber 1g. Net Carbs 3.7, protein 33 and Fat 29g.
