Have been asked to bring appetizers to a dinner this Friday. Any ideas?

BelGioioso makes an "unwrap and roll" mozzarella cheese sheet. It's literally a roll of flattened sheet of cheese that's like 20 inches long and 6 inches wide. It's not difficult to find, even in my small town. I cut this in half to make 2 sheets that are 10 inch by 6 inch. Then I layer one sheet with thin tomato slices (make sure you place the sliced tomato on paper towels for a bit so they aren't so juicy-wet), proscuitto ham, and a bit of fresh basil leaves. Roll it up tightly, refrigerate for a bit, then slice into 1/2 inch slices on a plate with a garnish. I do the second roll with hard salami slices only, refrig, slice, and plate. Gives 2 different types of apps, can be eaten without utensils (finger food), takes minutes to make, is attractive, fairly budget friendly, low carb, and super easy. Hope that helped!

I've also done these rolls stuffed with other things--roasted red bell peppers and fresh basil, deli roast beef and blue cheese crumbles, deli turkey with a wee bit of dijon mustard, marinated artichoke hearts and parma ham, etc etc.

Buffy - Friday has passed but I found a recipe that is delicious. Pretty easy to make and way in advance:
Marinated Roasted Peppers, Olives, and Cheese
Would also be nice to have it in the fridge as emergency food Laughing

Oooo, Jozette, that recipe sounds great! Would make a nice lunch, too, paired with chicken and a salad.
