The Parmesan crisps use fresh parm. I've made them in the microwave. I just watch until they start to dry out and the edges are starting to get brown. I've used shredded cheddar make a "sandwich" before. I've used mozzarella to make a pizza roll also. You MUST use parchment paper even in the microwave or they will stick and tear!
Just spread the cheese in a circle on parchment paper and pop in the microwave until its cooked through the center and the edges are starting to brown. Let it sit on the counter as you are prepping other ingredients. For the pizza roll, chop up your favorite toppings and microwave for about 45 seconds. Pepperoni is a must because the grease helps cook the other pieces like onion, mushrooms, etc. Put your pizza toppings on the cooked mozzarella circle and roll up like a taquito and dip in pizza sauce. Super yummy!
