It's very important to remember that this is NOT a list of what you MUST have.
These are just suggestions of what you might want to fix. Be creative!
Take an idea from one and use it with another! Smile

And don't worry if you don't have ALL of the ingredients listed. I really don't
know very many people who do. Certain less-important ingredients can be
omitted and still the outcome is good Smile

Lettuce Roll-ups -- Roll luncheon meat, egg salad, tuna or other filling and veggies in lettuce leaves

Lunch Meat Roll-ups -- Roll cheese or veggies in lunch meat (read the labels for carbs on the lunch meat)

Spinach dip, or other low-carb dip spread on lunch meat or lettuce and then roll it up

Raw veggies and spinach dip, or other low-carb dip
Pork rinds, with or without dip

Mushrooms with cheese spread inside (or other low-carb spreads or dips)

Pepperoni Chips -- Microwave pepperoni slices until crisp. Great with cheeses and dips

Parmesan Crisps -- Pour tablespoon-sized piles of grated parmesan onto baking sheet lined with parchment paper, or well-greased aluminum foil. Pat down to make circles. Bake at 400 degrees F. for 2-5 minutes. Crisps are done when edges are golden brown.

Is the Parmesan crisps made with the canned "shaker" Parmesan or real shredded Parmesan?

I've never made them before, but most of the recipes I've found say to use freshly grated Parmesan cheese, not the kind in the can. Although, I did find one recipe that used the Kraft Parmesan in the can. If you make them, Tammy, let us know how they turn out Smile

The Parmesan crisps use fresh parm. I've made them in the microwave. I just watch until they start to dry out and the edges are starting to get brown. I've used shredded cheddar make a "sandwich" before. I've used mozzarella to make a pizza roll also. You MUST use parchment paper even in the microwave or they will stick and tear!

Just spread the cheese in a circle on parchment paper and pop in the microwave until its cooked through the center and the edges are starting to brown. Let it sit on the counter as you are prepping other ingredients. For the pizza roll, chop up your favorite toppings and microwave for about 45 seconds. Pepperoni is a must because the grease helps cook the other pieces like onion, mushrooms, etc. Put your pizza toppings on the cooked mozzarella circle and roll up like a taquito and dip in pizza sauce. Super yummy!

Steamed finely shredded cabbage, topped with bacon fat, bacon, and cheese. Kind of like spaghetti, where you want more cheese than they usually give you. My boyfriend thought it was great, and he's not on a diet.
