Creative ways for eating fruit:

- smoothies
- pumpkinsoup
- lettuce with rostbeef and strawberries (very tasty)
- applesauce (very easy to make yourselve)
- juices (orangejuice being the most common)

Do you have a recipe for pumpkin soup? That's a new one for me. I usually eat plain fresh fruit to get the fiber, but I think that pumpkin has really high fiber too.

Ingredients
6 cups chicken stock (i use a chicken cube)
1 1/2 teaspoons salt
4 cups pumpkin puree
1 teaspoon chopped fresh parsley
1 cup chopped onion
1/2 teaspoon chopped fresh thyme
1 clove garlic, minced
5 whole black peppercorns

looking at the ingredients you only have the calories from the pumpkin.

Directions
1.Heat stock, salt, pumpkin, onion, thyme, garlic, and peppercorns. Bring to a boil, reduce heat to low, and simmer for 30 minutes uncovered.
2.Puree the soup in small batches (1 cup at a time) using a food processor or blender.
3.Return to pan, and bring to a boil again. Reduce heat to low, and simmer for another 30 minutes, uncovered. Pour into soup bowls and garnish with fresh parsley.

A great dish cooked this week: pineapple and diced chicken breast (fried in wok with curry spices and a bit of olive oil and lemon juice), with a green salad on the side, mosterd dressing.
