Creative ways to sneek more veggies into your diet:

- (tomato) soup
- use lettuce and cucumber on your sandwiches
- spinach goes very well with pasta!
- bring raw veggies to lunch. like carrots etc...
- hide veggies inside meats

i was hoping for some ideas from you guys too Wink

today i ate chicory with ham and cheese.
i will upload this in my recepy-list for those who might wonder...
It is a nice dish, but a bit on the fatty side for most diets.

Recipe 1: spinach, lean bacon and pine nuts; fried (with NO added oil...)
Recipe 2: salad of grated celeriac, light lemon and olive oil, melon and a few slices of lean italian ham.
Recipe 3: ratatouille !!! always a winner for me : you chop red and yellow peppers, tomatoes, eggplant, zucchini, onions, fry in olive oil, add salt and pepper; add a bit of water, let simmer until cooked! Serve with pasta, rice, couscous...
