HEALTHY PUMPKIN CARROT MUFFINS

INGREDIENTS
2 cups whole wheat flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
3/4 cup skim milk
½ cup cottage cheese
1 tsb vanilla
1 1/2 teaspoons lemon juice
½ cup simply egg whites
1 1/4 cup pumpkin
1 1/2 cups Splenda
1 cup (about 3 medium) carrots, grated

DIRECTIONS:
Pre-heat oven to 350 degrees
Grease 12 muffin tins
Combine in a large bowl:
-Flour, baking soda, cinnamon, sugar and salt
Add to the bowl:
- Pumpkin and Carrots
Beat in a Magic Bullet and add to mixture
- Eggs, Cottage Cheese, vanilla, lemon juice and Milk
Bake for 30 minutes or until knife comes out clean

Makes 12 large muffins

Fibre = 44
Points = 24

Per Muffin (1/12)
Calories = 101
Fat = 0.6
Fibre = 3.6
Points = 1pt

For two muffins
Calories = 202
Fat = 1.8
Fibre = 7
Points = 3

I'm trying out a healthy sugar cookie recipe tonight. Only 1 ww point for 2 cookies or 93 calories and 3g of fiber,

If anyone is interested in the recipe let me know Smile

Please share your sugar cookie recipe. I'm a recipe junkie and would love to be able to eat a few sugar cookies during Christmas.

HEALTHY SUGAR COOKIE RECIPE

- They turn out really fluffy and chewy

INGREDIENTS
- 2 cups Whole wheat flour
- 1/2 tsp Salt
- 1 cup Splenda
- 1/2 cup Apple Sauce
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Lemon Juice
- 1 tbsp Skim Milk
- 1/2 cup Egg Whites

DIRECTIONS
1. Pre-heat oven to 375 degrees and grease cookie sheet
2. Combine flour, baking powder, salt and sugar
3. Fold in apple sauce
4. Stir in egg whites, milk and lemon juice
5. Spoon onto cookie sheet - flatten with fork if desired (wetting the fork prevents it from sticking)
6. Bake for 10 minutes for until light brown around the edges

I hope you like them. They aren't crispy like real sugar cookies and the batter is a little more sticky but they are good. I like them with Jam on top.
