well it Looks like the gangs all here lol.

All for one and one for all... Key will be support and encouragement. I used to be veggie but it was a while back so i will have to try and reinvent some of my recipes

Yep!

I knew when I added the challenge that some people might struggle if they've never done an intentionally veggie day. So I'll be starting a thread with links to some nice veggie recipes. Particularly the warming kind.

But remember Mini challenges are OPTIONAL! If you don't want to go veggie a day a week then don't!

Riocaz - if you could give links to some veggie recipes for this challenge that would be so great. Vegies are so boring so having a 1 day veggie will be an awesome challenge. And I see myself either learning or trying something new along the way!

I have never had a veggie day so this will be interesting. riocaz, I am going to try the mediterranean vegetable stew tonight. i love stew, just never had it without the meat. I just have to figure out how to get my hubby to eat it Wink

Well I have served that stew with grilled lamb or chicken before. Just serve yours without the meat. Smile

I have done veggie before when I was Catholic and couldn't eat meat on Fridays during Lent, but it's been awhile. I love fish(Tilapia especially) so that shouldn't be a problem. I will look at the link that VB shared and see if there's anything else i'd like to try!

Pfft Riocaz...don't try bringing logic into it Razz My sister is a, um, 'fish vegetarian', I can't say I get it. But she's on the bit-too-skinny side, so if she's eating something of substance no one dares mention it.
