Just a very basic weekday dish...not too exciting but easy to make and keeps well for weekday lunch. Make a big batch for dinner early in the week and take to work. The basics: Cooked quinoa. Sauted mushrooms and bell peppers or whatever veggies you like. You can use lots of veggies, low cal and good fiber. I made a batch of 2 cups Quinoa. Used a postal scale
