Go as much full paleo as you can in the beginning to see what your body can do when you eat food your body was designed to use as fuel. After a month or so, if you "feel" like you still need to have grains, legumes, potatoes, dairy, try adding one item at one meal for about a week to see how it effects you. Never add more than one. If you start feeling bloated, gassy, sore, sluggish, etc., you will know that item needs to stay out of your diet. If the item doesn't effect you negatively (handy to have a blood glucose meter here), you can add it back into your diet, but don't overdo it. It may prove to be toxic at larger or more frequent amounts. Also, monitor yourself and be prepared to reject items if your body stops handling any dietary item well. The inflammation and resultant damage to your cardiovascular system, cancer risk, and longevity/quality of life, are not worth the short term nostalgic emotional response.
