Bake your bacon. Less mess and smoke, plus much faster to make the "perfect" strip of bacon. Spread bacon over baking sheet (with edges, obviously, as grease is going to come off the bacon) and put it into a cold oven. Turn it on to 400, set a timer for 17 minutes, and go away. Check when done by color. Should be golden. The texture will develop into perfection after it comes out of the oven. Transfer it immediately to paper towels to drain and cool. This is where the magic will happen and the bacon gets that perfect balance of crispy and chewy. On the stovetop, it normally takes an hour on low heat, with constant turning and tending, to get bacon this perfect. Enjoy!

Put a piece of parchment paper on the baking sheet for a quicker cleanup. Save the bacon fat!
