Everybody's body handles carbs differently, but for me, their low carb bread raises my blood sugar more than the 1 or 2 net carbs their label claims. The zero carb bread effects me much less, but I've only tried it several times. For example, 5 hours after b'fast, I ate 1 slice each of zero carb, one carb, and two carb Julian's bread plain, without covering with insulin. My blood sugar was 50 mg/dl 2 hrs later. 3g of carbohydrate normally raises my BG by ~21 mg/dl. So the 3 slices of Julian's acted more like 7g of carbohydrate. Still a lot less than an equal amount of normal wheat/grain bread would have. I'll do some more tests on the breads individually to see if I can narrow down where the discrepancies lie.
