Ontbijtmuffins

Muffin van groenten en eieren.

Ingredients

Directions

  1. Verwarm je oven op 190 gr celsius. Hak alle groentjes fijn, stoof ze in een grote pan en kruid naar smaak. Wanneer ze zacht worden haal je ze van het vuur.
  2. Verdeel je groenten over 12 muffinvormpjes, die je licht ingesmeerd hebt met olie. Klop de eieren los in een maatbeker en vul de muffinvormpjes toe boven met het eiermengsel.
  3. Laat 15 min in de oven bakken. Laat even afkoelen voor je de muffins uit de vormpjes haalt. Je kan ze direct eten, max 4 dagen in de koelkast bewaren of invriezen (best dag voordat je ze wil eten, ontdooien).
