Eating a plant based diet has afforded me the "luxury" of eating like a pig and not feel deprived. I fill my plate with steamed, roasted, or sauteed veggies like summer squash, zucchini, mushrooms, onions & tomatoes. Using as little olive oil as needed and most the time only spraying them with a garlic infused oil spray. Herbs have also allowed me to add significant flavor without ramping up my salt intake(although I've still have to work on lower my salt). I'm also experimenting with veggies that haven't been on my radar. Kohlrabi, daikon, turnips... its amazing that there is actually more than just corn, carrots, green beans, & peas out there. The frozen food section, while very handy, is not a complete representation of what is available in the fresh food section or the quality from the Farmer's Market(or my backyard garden).

I have practiced parking as far from the door when going shopping and even at work. At least I'm getting a few more steps in.

All in all, I may not be losing as fast as I'd prefer I am losing at a safe & steady rate. I have to focus on the overall picture and the best way for me to go down a path that will lead me to a health lifestyle that doesn't end.
