Have you read Rick Gallup's book, Living the GI Diet? I bought it when I realized I have a medical condition that could lead to insulin resistance and perhaps one day diabetes. So far (4 weeks now) my husband and I have found his advice fairly easy to follow. He made the comment that he doesn't even feel like we're eating diet food. I'd reccomend the book, it has a breakdown of how and why the diet works, and a lot of recipes.
