Cindy Eggleston's Journal, 27 November 2007

This is my third day on the Curves "carb sensitive" diet, the first day was a killer but since then has not been bad. I've been sure to have a lot of safe foods on hand to eat and that helps a lot. I've noticed it is a lot harder to follow a low carb diet and it takes more time, I guess because usually it is so easy to just make a sandwich (bread is a no no right now) or put your cheese or tuna on crackers or have a quick bowl of cold cereal or oatmeal in the mornings. It takes more effort having to actually cook the eggs and breakfast meats and so on, but is seems to work for me when I do it so it's worth it. Today was tough because I got called as a jury member and the trial is supposed to last through the week is not into next. I skipped my morning coffee knowing I would have to stand and answer questions and didn't need to be extra nervous, and the fastest thing to eat since I am not an early morning person was to eat a few bites of sugar free pudding. So by around 11:30 my stomach was growling very loudly in the jury box and I was so sleepy for not having my coffee! Now that I know I am on the jury I will plan my meals ahead, I live close enough to the court house to come home for the hour lunch so that is not a problem, just have to be sure to eat some protein in the morning. It did feel good to see the numbers down on the scale this morning.
