Johanne's Journal, 29 October 2015

4th day of "fast mimicking". It's getting easier. One day to go. The weather has gone suddenly cold. It's been so warm, it's just been a continuation of summer. I'm getting too old for winter. Every year I better understand why old people move to
places like Florida and Nevada. LOL!

I know what you mean. The cold weather is getting harder to accept. LOL! Joanne, I know you have tried different gluten free foods but are you diabetic? I just wondered how the flours affected your blood sugar? I just bought a lot of the King Arthur gluten free flours and mixes and wondered if I made a mistake as I am very insulin sensitive.

Sandy, when I dropped Gluten, I went out of the diabetic range. I still take Metformin, but eat high complex carb. I really don't worry about carbs at all any more. I just seldom eat junk carbs. My A1c is 5.4. I do have occasional hypoglycemic incidents, which is why I'm keeping close watch on my glucose during this fast. You will have to see how you react. The reason I use the products I named is because there isn't a lot of white rice flour, potato flour, potato starch, etc. in them. I haven't looked into the King Arthur ingredients.
