Someone mentioned a while back that they lost nothing; that .2 pounds lost is nothing.

Well, I will gladly take that .2 pounds and enter it because 7 of these is 1.4 in a week! As I mentioned about 2 weeks ago, a small loss or a zero gain is the only thing acceptable until I open up my Christmas present, ME!!!!! LOL

Feeling good today. Sorry about the over that top quasi narcissism but I do hope the energy rubs off and we continue with the journey to our new way of living.

To change subjects, my sis can't have gluten. I love pizza so I found this great recipe for her that I wanted to share. The only thing I would change is to spice up the tomato sauce a bit more and maybe add some mushrooms. Let me know if you try it and your thoughts:

2 cups cauliflower
• 1 egg
• 1/4 tsp salt
• 1/2 cup shredded mozzarella
• 3 oz sliced mozzarella
• 1/3 cup tomato sauce
• 1/2 oz prosciutto
• Basil for garnish
In a food processor, pulse cauliflower until finely chopped. Steam 15 minutes; cool. Heat oven to 450°. In a bowl, combine cauliflower, egg, salt and shredded mozzarella. Spread into a 10-inch round on a nonstick baking sheet; bake 25 minutes. Cool slightly; top with cup tomato sauce, sliced mozzarella and prosciutto; bake 10 minutes more. Garnish with basil.
The Skinny: 307 calories per serving, 15 g fat (7 g saturated), 17 g carbs, 4 g fiber, 30 g protein
211.8 lb Lost so far: 57.2 lb.    Still to go: 46.8 lb.    Diet followed reasonably well.

It's very important to make sure the cauliflower is very very dry, squeeze out as much liquid as possible after cooking. When I made this it was pretty soft, not very crispy. Also, I just saw a tip on tv (valerie bertinelli's show) to put the cheese on then the sauce as the sauce can make it soggy also. I have not tried it since my first "experiment"!

I've made the cauliflower pizza and the ground chicken pizza. Both are pretty good, low in carbs, and healthy for you. Enjoy!

I made cauliflower pizza a while back and it was very tasty. Gonna make it again soon. That sucker lasted me 4 days ...bought butternut squash today for some soup with curry...uhg I'm already melting just thinking about it 😇

Cauliflower pizza crust is the best! I tried to put the recipe in the recipe area, but it is still hanging there "pending". But it is great.

Nice job on the loss and YES every single little ounce adds up to bigger numbers over time, always feel good about losing every little bit! The cauliflower crust pizza is good too.

We've been making cauliflower crusts for weeks now, because I refuse to miss pizza night! :) The big trick is to squeeze the living daylights out of it after you cook it. If you don't get at minimum 1 full cup of water from then squeeze some more. It's so SO good that my husband even makes his own, instead of using frozen ready to eat gluten free crusts that we used to use. Even when it's not squeezed out enough and too mushy to pick up to eat, it's scrumptious!

I have done this too,, and what RcKc said is true,, drain well !1 it is very yummy,, maybe I will give it another whirl as well,, I haven't had pizza in ages !!
