Well, I lost 5 lbs in three days, then it started rising back up a little. I stayed the course, didn't eat anything I wasn't supposed to. On the other hand, I don't think I'm eating like I am "dieting" either. If I'm hungry, I have something to satisfy it, but those "snacks" are legal snacks...cheese, deviled egg, cucumber spears with a tad of ranch, milk. I try to think of it as a lifestyle change moreso than a "diet", per se. I ended up with a 4.4 lb loss for the week. I'll take that, it's a decent start.

I am a realist, and know that I probably won't lose very much this week (have done sbd more than once in the past, and have never lost more than 1 lb in week two), but I'm only one week away from phase two, and that's where the real weight loss will start. This week I look at as continuing the adjustment, getting my system accustomed to sbd and putting cravings further at bay.

Today I am trying a recipe I have most been looking forward to....jicama hash browns! I shredded it up last night before I went to bed, this morning I am going to try cooking it, then have a serving with a tad of low carb ketchup. I have hopeful anticipation...if it's good, I won't be drinking tomato juice quite so often.

If I might comment to myself here, haha...I tried making hash brown jicama, and have some observations to make. Don't know if anyone else is interested in this, but if not I can make note for my own future reference. I didn't hate it, didn't love it. It is very fibrous....it won't get tender as potatoes do, and it's very chewy, very. No problem there, it's just different from anything I'm accustomed to. The taste is pretty sweet...to me it almost tasted like hashbrowns with pineapple or apple in them. I have read that the jicama tastes like a cross between and potato and an apple, and I would have to agree with that assessment. It is extremely filling. I didn't eat a lot of it, and had only a scrambled egg with it, and I am very full now. I tried them with a little one carb Heinz ketchup on them, and in hindsight that might not have complemented the dish at all. I didn't use all of the jicama this time, and think I will tweak the recipe (which I found on a sbd recipe board) and try something new, now that I know what to expect from jicama. Next time....no canola oil, I'm going to try canola spray. I'm going to find some way to incorporate shredded cheese (maybe stir it in just before serving), and leave off the ketchup. I think cheese would go much better with the sweeter, fruitier taste. May try throwing a little diced onion into the mix also.

low carb ketchup? Where oh where can that be found? Let me know how those jicima hash browns turn out, you have me curious, they sound yummy. Just keep up the great work, you just may be surprised this time round! You're doing awesome.

ImLuuvd, the only place I've been able to find the ketchup is Wal-Mart. It has Splenda in it, only one carb and five calories per tbsp. Tastes really good, too.
