So another week has flown by and I am down approx 2 lbs. I think I've been eating too much fruit and need some bulk....like some chicken. Taco salad would be good. I need to get more organized for the Fall season. I own my own business so if things don't get decided and ordered it just doesn't happen...even with the economy and the election people still need a few new things and if I don't make this place look like some fresh is going on...well they just won't stop in. What a struggle!
But its been sooooo HOT I'm just lazy. Tho it has crossed my mind that reducing my calorie in take has changed my concentration. I like the changes I have seen in the mirror and am basically obsessed with it. I just want to be Fat-No-More.
164.3 lb Lost so far: 30.7 lb.    Still to go: 24.3 lb.    Diet followed reasonably well.

What I do for Taco Salads now... I precook a pound or so of chicken each Sunday. I usually split them between a couple of marinades (like an italian or spedie and a fajita or mojo). Then it's in the fridge to top and salad! The Mex chicken on top of greens with tomato, cucs, beans, onion (whatever you like) then sprinkle some reduced fat cheese and salsa for dressing and good to go. (sometimes I mix salsa and ff sour cream for a creamy dressing) Can crush a few chips or a crisped low carb tortilla if you need that crunch but I don't even miss it anymore. I am a salad freak! I top with chicken, lean ground beef, tuna, beans, or even left over pork or steak to bulk it up. Pick a theme like mexican, greek, etc and roll with it!

Now I'm gonna have to have taco salad tomorrow night! I usually bake a tortilla shell until it's brown and crispy for the little crunch.
