@Leilaine have you tried egg whites for omelettes? Egg whites are very low calorie/cholesteral like egg beaters. The flavor is not as present with whites, however in omelettes you have other big flavors like veggies and cheese.
I prefer egg beaters, but it is an extra cost and some want to use what they have in the house already.

I'm not usually an omelet person because I like my eggs to be a little less done, but that looks AMAZING!

Thanks! I am a runny yolk, over easy, egg lover as well, but I started this diet with a 550 cholesterol count so egg beaters and egg whites became my new norm.
That said, I have really enjoyed all the flavor that egg beaters have brought vs egg whites. Now my latest cholesterol numbers are under 120!

Looks my dinner on the plate last nite. I make my own sausage: pork, thyme, basil. I loved Jimmy Dean (RIP), but he sang better than he cooked.

Does that fill you up? I think we need to make sure we aren't hungry in order to be successful long term. If that fills you up, great, but I would need about 3 servings. It looks delicious though. I love eggs anyway, anyhow.

It does fill me now yes. Initially it was hard to get my brain to realize that hunger and simply wanting to eat more is not the same thing.
By eating more times a day, but smaller portions I am never really hungry. I have more constant energy and at times even have to push myself to eat.
