OK -- I went off the reservation, sort of. I just couldn't cope with a writing emergency without ice cream, but I knew if I ate ice cream I would be sick for 2-3 days, so I couldn't figure out what to do. My friend Stephanie found a recipe on line for a mug chocolate cake you make in the micro that has no flour and no dairy. It was yummy -- and very satisfying, so that once I ate it, I felt as though I had gotten over the craving. So I don't actually feel too bad about it. I think this is a good go-to treat for when I get desperate...

I keep So Delicious no sugar added coconut milk desert in my freezer for those emergencies. Thankfully I haven't had to break it out in a while but it's there. :)

Thanks for the suggestion joc85 -- but I am trying to avoid buying these substitutes, which often have things like high fructose corn syrup or artificial sweeteners I'm not permitted on the FODMAP-IBS diet. What I will do this week is make my own lactose free ice cream. It's not low cal, but it's all natural and organic when I make it, and if I monitor my portions, it should be ok.

RoseTampa -- I was buying the coconut milk dessert for my Mom when she needed the calories but couldn't have dairy. She loved it. Unfortunately, I really dislike the smell of coconut and so I couldn't bring myself to eat it! (It's always something, isn't it?)

Leslie - the thing Jose was talking about is called Arctic Zero. It's mostly water but it's a nice substitute for ice cream. It's fat-free, low glycemic, gluten-free, lactose free, kosher and most of the flavors are 35 calories for 1/2 cup. No artificial sweeteners or high-fructose corn syrup. It's expensive but worth it for my serious ice cream addiction. :)

That Arctic Zero sound interesting to me, will have to check it out. Nice job Hermoines Mom with the substitute for ice cream, it sounds like a moc microwave brownie recipe I've tried before, not bad stuff at all.

Good grief Annie -- I completely missed that was Jose -- I couldn't figure out the reference to Anewannie! I've seen Artic Zero, and I'll have to try it out now that I know someone who has actually eaten it.
