Folks:

Well, tonight was an odd night and I was in Whole Foods and I just didn't want the tradition chicken, beef or fish meal. So , I wanted to find something different and I did:

Tonight's Meal:
Sauteed Chicken livers with onions in olive oil
Roasted Broccoli and Brussel Sprouts
Kim Chee

Verdict: Livers were great (of course you have to like liver)
It was the first time I had Kim Chee - basically spicy cabbage, not sure what the excitement is about - maybe an acquired taste
And, roasted veggies are the best.

Also: I had my first visit with an MD who focuses on functional medicine. Its a whole different world. He did a complete history ( I mean from birth onward). And, we discussed and reviewed through food logs my eating patterns and substances. And, I am having a battery of tests that will analyze markers for hormone levels, gut health and digestion process, cardio function,inflammation and a dozen others.

I saw a sample printout of the test and I will be curious about the results.
Also, we reviewed the use of supplements.

I will be curious when I go back in a month to review the results and get his opinion about my health. We spent about 90 minutes in the first appt.

I will update you next month.

Liver & onions and roasted Brussels sprouts without me?! I'll have to settle for inspiration. I like to freeze liver then slice it as thin as I can, then fry it. Afraid to look up carb count of liver...

T8U9- No fear - Carb count is low - Basically 3 grams per 3 oz serving. I try to eat all of my protein in 3 oz servings. It is interesting that your body remembers your carb and protein counts and will release the amount of insulin based on yesterdays meals. So if you keep it consistent - less work for your body

Thanks Bob! Didn't know that about insulin release. I'm putting together pre-fab meals for the freezer, so I should be able to get on a very consistent eating rhythm going. -- If you're willing to share the list of the tests in that battery, I'd be very interested. My doctor will order anything I specifically request, but doesn't suggest anything.

FYI--Kimchi= MAJOR boost to gut health. Lots of live good guys in there. 😊

T8U9 - I have to stop all supplements and no fish for four days then I will take the blood , DNA and urine samples for the tests. I think I will have a follow-up appointment to discuss results in a month. I will let you know what I find most useful.
