Smoked a rack of ribs over post oak this morning, they're always subtly different from the last time, these are off the chain.

Did another rack today, bought a couple of ricks of oak from a local hardwood saw mill, just about considering making a permanent switch to exclusively oak!

Lightly salted with kosher salt, barely dusted with cracked pepper. Sometimes I use a little McCormick's Smokehouse Maple or Brazilian Steakhouse grill mates, but that's it. Smoke over pecan or oak for three hours @~220°, maintain temperature @200° for another three hours. I might cut down the cook time next time because they got a little too, "fall-off-the-bone" for my tastes. Fall-off-the-bone means they're overcooked.
