Okay FS friends... I am mad at you.

How? HOW??? How did you people let me struggle for 11 weeks to find low carb yummy food without anyone ever mentioning FATHEAD PIZZA DOUGH? Geez you people are cruel.

Seriously, though, that stuff is amazing! Someone mentioned it in their journal post and I ran and found the recipe. Wonderful stuff, that is!

On another note, tomorrow is a weigh in day. Should be interesting. May is the "birthday month" for a lot of may family, and this weekend, it was Mom's 78th birthday. We went out to a steakhouse for lunch, then home to Mom's for cake and ice cream. My brother's girlfriend is a baker and made this humongous cake from scratch so we were, of course, all obligated to have some.

So yesterday for lunch, I had a steak and half a baked potato, chose green beans for my other side and skipped the rolls. I also nibbled some fried pickles and onion blossom, but tried to keep those to a minimum. Then there was the cake...

Oh my gosh, it was HUGE. And chocolate. Three layers of heavy, rich decadence. And naturally, she cut gut wrenching sized pieces for everyone. I spent the beginning of the "fest" playing with my grandson and trying to ignore the cake but no one seemed content to let that be. Meanwhile, my Type 1 diabetic daughter in law sat down to one of the behemoth pieces and cake and tucked in.

She got through a little less than half of it and gave up. She came to feed the baby (which I reluctantly relinquished) so I slipped into her seat at the table and continued work on the piece of cake she left behind. Between the two of us, we made an acceptable showing of consumption, and I was able to walk away with minimal damage. After that, I adamantly closed my eating window for the day.

In general, I stayed within my calorie limits, but I blew the top off the carbs. I knew it and I allowed myself to just have fun and enjoy. This morning, the scale showed no change and I'm hoping that a little light eating today will accommodate all those extra carbs from yesterday.

All in all, I feel like this weekend was a victory. I have reached a point where I can participate in fun, food-filled activities, and still win my nutritional war. Last weekend was a wedding and birthday, this weekend was a birthday and holiday and next weekend is one more birthday. Kinda looking forward to June now, so I can settle back into my regular routine.

@badkev26 Fathead dough is delicious! It's pizza dough made with almond flour, cream cheese and mozzarella. Google it or in sure someone has posted it on here. It only has a few carbs per slice and it is VERY filling!

Way to go! Sometimes my hubby and will asked for a second plate and share a piece of pie at the local eatery.

What is Fat Head Pizza Dough??? I live in Canada (1.5 hours from Toronto) and have never hear of it.

FatHead dough is wonderful dough made from mozzarella cheese, cream cheese, egg, and nut or coconut flour. Very versatile, not to mention yummy and delicious.
