having a hard time motivating myself.....i know its all worth it, but when i'm really stressed i seek comfort in food....and since i don't have time time to cook all the time its just going to be something quick, which is usually something i am not soposed to eat doing atkins.....bummer....

Hi Laura! I have a daughter living in Germany right now! She got married last year, and my SIL is in the Army and they are stationed in Germany (Baumholder). I was reading your profile and saw that you are getting married this year, is that right? How exciting! As far as the Atkins and having foods around that are more "comfort type foods" rather than quick grab and go. Do you have time on your day off to cook some, and then freeze? I am a soup girl for comfort food and so I make a meatball soup and freeze it in serving size containers. When I'm looking for something hot and soothing, it only takes 5 mins in the micro! It is just turkey sausage made into bite sized meatballs, browned in a skillet and then cooked in a soup pot with beef broth, some onion, green pepper, and green beans. You can add more veggies that are Atkins friendly depending on where you are in your process. I'm still in induction and trying to keep my carbs under 20 so I have minimal veggies in mine. Sometimes when I warm it up I sprinkle some shredded mozzarella cheese over it and let that melt. It reminds me of french onion soup! When I'm really in a hurry I try to always have turkey pepperoni sticks, cheese sticks, and various lunch meats like turkey, chicken, roast beef. Also anothe thing that saves me is the precooked hamburgers they make now that you just microwave for 2 mins and they are delicious! I'm not sure if you can find them in Germany though. BUT......I also grill up a bunch of brats on the weekend and keep those in the fridge for my son to grab and go (he's doing Atkins too). Another thing that I love to have on hand is tuna salad, sometimes I will put it on a plate, with a slice of tomato on top, and then a slice of cheese, and microwave it for a minute and you get a yummy tuna melt minus the bread! ;-) One last suggestion is this, do you have a crock pot? There are alot of low carb meals you can cook in your crockpot just put it all in the morning, turn it on low and when you get home you have a nice hot comforting meal! Roasts, chicken, sausages, meatballs. Maybe you should google some low carb slow cooker recipes and it might get you excited about what you could have waiting for you when you get home from work. Even if you don't have one it might be worth buying one just to get your re-motivated! :-)

you can find quick stuff. you might just have to prep ahead. have cooked chicken breasts ready, string cheese, veggies with dip, and eggs. oh my goodness, eggs are the quickest thing ever! and if you already have veggies cut, and even if you don't, it's still really fast!
