Thanks Maxie! You have a great evening too! I could eat this any time of day too, V! I like it because it's quick and I didn't have anything thawed out, lol. It's not a heavy meal either, which is good for such a late supper.

It was yummy! I sprinkled some flax seed on my eggs to get some extra healthy fats in for the day. Had a major calorie deficit for the day. Too much, actually. That's why I also added the avocado.
