All sorts of colorful veggies are making to the stores. I've seen carrots and cauliflower in fun colors

There are over a 1,000 varieties of potato, bred through millenia of selective breading. More varieties are simply becoming available in standard markets.

This looks exactly like what I want to be eating. Amazing.

Good news Leon, it is super easy to make. Potatoes and brussel sprouts were microwaved, baked beans were from a can and a bunch arugula on the bottom. It was about 550 calories. I even got all the ingredients from a single store!
