Homemade GF Chicken Pad Thai... minus the brown sugar, used a no sugar added crunchy peanut butter. I thought I was going to be disappointed... fam also had Pad Thai rice noodles... ended up DELISH.

@happy it was so delish, I didn’t even feel like I was missing out on the noodles and the sauce didn’t seem like it even needed the brown sugar, tasted great.

Looks good! Have you tried with the zoodles or the Konjac noodles? 🤷🏻‍♀️Another ‘real’ sugar that sort of carries some of the taste of brown sugar with it into recipes is coconut sugar. And to me, raw sugar gives a slightly vanilla taste. But for this, you might try to purée a quarter of a cooked yam with your peanut butter and an 1/8 teaspoon of salt. It might just trick your tastebuds even further. You probably didn’t notice so much because you didn’t have the deadening effect of the noodles in the dish as well. I love experimenting with cooking! LOL 🙋🏻

If you ever miss noodles, particularly for Asian food try the Shirataki tofu noodles - super yummy, very few carbs, very few calories. I use them anywhere I would normally use noodles. They are in the refrigerator section of the store and come in a bag with liquid. 4 oz serving has 10 calories 3 g carbs

@smprowett, I think my taste buds have changed also. So I didn’t feel like it was lacking any sweetness, maybe the cooked peanuts and the few baby carrots added just enough flavor. But it was pretty perfect. I do use the konjac noodles occasionally. They are really filling and this meal was already under calorie/fat/carb for my daily goals, so I wanted more “food” and no “fillers”. I like to use them on days my daily cals/carbs maximum are almost reached.
