Retta Smith's Journal, 16 January 2018

I just got through boiling my large eggs, for my low carb tuna fish salad, and they came out purr-fectly, I cooked them in cold water, on Mid-High(7 on my stove), and put a capsule full of organic apple cider vinegar, set my timer for 20 minutes, when they started to boil, I took my lid off and let them finished, and once the timer ring, I ran cold water in the same pot, and let it cool them down, crack and peel. (apple cider vinegar make the shell come off very easy)

2nd picture, you see this little gadget (potato slicer) cut the boiled eggs up purr-fectly and uniform.

3rd picture, my low carb tuna salad, which consist of 4 can of tuna in water drained, 6 soft boiled eggs, 3 thinly slice red onions, 2 tsp of powder onion, 4 tbsp of mayo, 3 tsp of mustard with little hills, 3 tbsp of bill pickle relish, 5 tsp of Splenda. Mix and refrigerate.

I just wanted to share, and help someone along the way. #IBeenDeliverFromDiabetes

Thank you for the vinegar tip! I hate boiling eggs because the shells never peel off nicely🙂 yours look awesome!

Retta it is not the vinegar that makes the shell come off easily. It is that you are peeling them immediately. What is faster is when they are cooked take off stove, leave all eggs in the pan, remove a hot egg crack it all around with a spoon and hold under cold running water and peel. Voila !

If you’re trying to lose weight u might consider getting rid if some of the egg yolks 1 boiled egg has approximately 78 calories 1 boiled egg without egg yolk has approximately 17 so by getting rid of one egg yolk you’re actually saving yourself 61 calories!!

That looks really good. I had not thought of adding a small amount of splenda. I guess that would help it taste like salad dressing tuna. Thanks for sharing.
