Depression has set in as it usually does after Christmas. I missed breakfast and lunch today because I slept through them. Now I am faced with the choice of three menu items in the diningroom. Low mein (no carbs in those noodles, right?), Sausage and pepper sandwich (no carbs there unless you eat the sub roll thus making it an unsandwich), or what they call the healthy choice, good for diabetics, "PASTA bolognese." Pasta covered with a tomato cream sauce. This is rediculous. Fortunately Ern has brought bacon from breakfast today and sausage yesterday. I'm going to reheat them in the microwave then add turkey breast, Swiss cheese and lettuce and put them on two slices of low carb bread. They don't serve salad at night but I have a head of lettuce that I m going to wedge with dressing as well as tearing some leaves for the sandwich. I also have Kozy Shack pudding for dessert with a squirting of ReddiWhip. This meal still requires 7 units of insulin but it is something I like and will be filling. Hope everyone is staying warm and safe.
