Looks and tastes better this time. I ditched the alfredo sauce, and added ricotta to the bread batter.

@draglist I make one serving of almond flour quick bread, slice it in half, and put the toppings on.

Can you post the recipe for the almond flour quick bread?? Looks fantastic and I'm in with Bill on this one!

Sure! This is for one serving, you can multiply it to make as much as you want.
1/2 tsp baking powder
1/4 cup almond flour
1 egg
1 tbsp melted butter
Stir all ingredients together until smooth. Pour into a small, greased, oven-safe container (I use a mini loaf pan which is the perfect size to me).
Bake for 10 minutes at 375 degrees.
Sweet version:
One of my new favorite treats is to add three packets of stevia, 1 tsp vanilla, and a small amount of dark chocolate chunks to the batter. Then I pour the batter into three spaces of a mini muffin tin and bake for the same time and temperature. It's heavenly and (basically) guilt-free.
