The best way to start is plan out your day a head of time. But honestly, at your current weight, you should be able to eat more and lose. As you get to a lower weight, you may need to cut calories to keep on losing, so it's always better to start higher and than cut them as you go if needed. Why not try 1500 for a week and see what happens. It will be an easier transition too. Get plenty of lean protein, lean dairy, fruits and veggies. Keep processed foods to a minimum. Drink water! Be active! Stay consistent! You can always google "sample menu plans for 1200 or 1500 calories) and some will come up to give you some idea. I think it's good to space out your calories all day.
